Ingredients:

  • Softened butter- 1 cup
  • Sugar- 1 tablespoon
  • Brown sugar- 1 cup
  • Eggs- 1 large
  • Vanilla extract- 1 tablespoon
  • All-purpose flour- 2 1/2 cups
  • Baking cocoa- 3/4 cups
  • Baking soda- 1 teaspoon
  • Chopped pecans- 1 cup
  • Rolo candies- 1 package

Procedure:

Take a large bowl and combine butter, 1 cup sugar and brown sugar together. Beat in eggs and vanilla. Mix the dry ingredients -- flour, cocoa and baking soda by gradually adding them into the creamed mixture until they are fully combined. Stir in 1/2 cup pecans.

Take a teaspoon full of the dough and shape it around each Rolo candy. In a small bowl, add in the remaining chopped pecans and sugar and give them a good mix. Now dip the cookies halfway into the mixture.

Line a baking tray with a baking sheet and place the cookies with the nut side up. Bake at 375° for 7-10 minutes until the top is slightly cracked. Let them cool. Remove the wire racks to cool completely. The cookies are ready to serve.
