Muffins are possibly one of the best morning snack and also are a great way to fight the mid-day hunger pangs. Turns out, we have one more reason to really, really love baking muffins because they are a great way to use up the overripe bunch of bananas or other fruits that were forgotten on the table.

Aspiring bakers can use National Muffin Day, observed on Feb. 20, as an opportunity to indulge in these yummy miniature cakes by baking some on their own. To mark the occasion, below is a recipe for a delicious raspberry streusel muffin followed by some quotes to whet your cravings.

Raspberry Streusel Muffin recipe

Ingredients:

All-purpose flour- 2 cups
Baking powder- 1 tablespoon
Salt- 1/4 tablespoon
Lemon zest- 2 tablespoons
Condensed milk- 1 can
Egg- 1 large
Butter- 1/4 cup, melted
Milk- 1/4 cup
Fresh raspberries- 1 cup
Sugar- 1/3 cup
Ground cinnamon- 1/2 tablespoon
Butter- 2 tablespoons

Method:

Heat oven to 375 degrees and coat 12 muffin cups with non-stick cooking spray. Take a large bowl and combine the flour, baking powder, salt, and lemon zest. Make a well in the center of the mixture and stir in sweetened condensed milk, egg, melted butter, and milk. Stir well until combined, and fold in raspberries. Pour the batter into the prepared pan, and fill each cup till it's two-thirds full.

Combine the remaining 1/4 cup of flour, sugar, and cinnamon. Cut 2 tablespoons of cold butter with a pastry blender or break it down using 2 knives until it looks coarse. Sprinkle the butter and sweetened cinnamon flour mixture evenly over the muffin batter. Bake for 18-20 minutes until golden brown.
