Ingredients:
- Sugar- 3/4 cup
- Water- 1 1/2 cups
- 1 large ginger, peeled and cut into coins or julienned
- Bar sugar
- Freshly grated nutmeg
- Good quality tequila (2 ounces) or reposado
- Lime juice and lime wedges for garnish
Procedure:
Combine sugar and water in a pan and bring it to a light simmer, waiting for the sugar to dissolve. Add some ginger and steep for 30 minutes for the root to release its flavor. Combine the remaining ginger and maple syrup and blend them into a puree. Strain the pulp and store it in a lightly sealed jar or bottle. You can preserve it in the refrigerator for days. Pour some bar sugar onto a plate and sprinkle it with some grated nutmeg and give them a good mix. Add in the tequila, lime juice, 5 ounces ginger-maple syrup and ice to a cocktail shaker and shake it to perfection. Now, decorate the rim of the serving glass with the lime wedge and dip in sugar/nutmeg mixture, ice, and lastly the contents of the shaker. Sprinkle the drink with some grated nutmeg before serving.
