Gordon Ramsay Faces Backlash For His 'Puerto Rican Crispy Rice Dish': 'This Is Blasphemy'
KEY POINTS
- Gordon Ramsay called pegao a "Puerto Rican crispy rice dish" in the new episode of his YouTube series
- A chef clarified that pegao is not a dish itself but rather a technique that belongs in many Puerto Rican recipes
- Social media users criticized Ramsay for mislabeling the food
Gordon Ramsay received flak online after recently attempting to "elevate" a famous Puerto Rican food.
Earlier this week, Ramsay guided viewers through a recipe for pegao, which he described as a "Puerto Rican crispy rice dish" in a new episode of his YouTube series "Scrambled: On the Road."
However, social media users pointed out that he mislabeled his dish, which NBC News noted resembles fried rice or a Puerto Rican dish called arroz mamposteao in the video. According to People, pegao is actually a "Puerto Rican culinary term that refers to the crispy rice that cooks around the edge and bottom of the pot" rather than a dish.
"This isn't Pegao because Pegao isn't a dish you can make, Pegao is literally the crispy rice on the bottom of the pot from cooking Puerto Rican rice how we normally would. This is literally just some concoction he made that has crispy rice on the bottom. Real Puerto Ricans know the difference," one user commented on the video uploaded on YouTube.
"Not a single puertorican on this earth makes that or calls it 'pegao' Pegao is just the crunchy rice that sticks to the bottom of the rice cooker or the pot when cooking fresh rice. That's it and every single puertorriqueño will tell you that," another person tweeted. "This? This is blasphemy."
"What a disrespectful video, that’s horrible. Caribbean dishes are delicious and well made," another wrote on Twitter.
"Did you even bother to consult with Puerto Rican chefs about this recipe?" Jessica van Dop, an international traveler and food connoisseur, asked.
Others appreciated Ramsay's efforts to bring attention to Puerto Rican cuisine. Many of them sent their love to Ramsay while correcting him.
"The fact you chose my island to showcase some of our food culture and beautiful nature, that makes us really happy. You're a bada-- chef," one commented on YouTube.
"Plain and simple. This is not 'pegao' but I guess since he has so many followers some may believe it is. Anyway, I will eat this dish in a heartbeat," another fan commented.
"As a Puerto Rican, I'm honored to have you on our Island," another fan wrote.
"Love ya, but that’s not pegao. Pegao is not a dish, it’s just the burned bottom of a pot of rice," another user commented.
Puerto Rican-born chef and recipe developer Reina Gascon-Lopez told Today that pegao is not a dish itself but rather a technique that belongs in many Puerto Rican recipes.
"What's most problematic here is that with the reach and size of his audience, his fans are going to take what he says at face value, even when a dish is incorrectly named and/or executed," she told the outlet.
