One such dish is Salmon, preparing which for New Year’s Eve will surely trump big parties and expensive booze.

It’s very important to wait for your skillet to catch proper heat before you sear your fish. You must also make sure that your pan is thoroughly coated with oil. Place the fish with the skin side up to avoid burning. Once you hear the sizzle after the fish makes contact with the hot oil, leave it undisturbed for a few minutes on simmer to cook properly and flip it over with a spatula for the other side to cook.
Ingredients:
- 1/3 cup of honey
- ¼ cup of soy sauce
- 2 tbsp lemon juice
- 1 tbsp red pepper flakes
- 3 tbsp extra virgin olive oil
- 4-6 oz. salmon fillets patted dry with a paper towel
- Kosher salt
- Ground black pepper
- 3 minced garlic cloves
- 1 lemon, sliced round the edges
Step-by-step recipe:
- Take a medium-sized bowl and put honey, soy sauce, lemon juice, and red pepper flakes into it.
- Take a large skillet and place it on medium-high heat. Pour two tablespoons of olive oil and let the oil heat. Place the fish fillets with skin side up on the skillet before the oil starts to smoke.
- Season the searing fish with salt and pepper. Leave it undisturbed for at least 6 minutes until it is cooked golden.
- Turn over the fish and add the remaining oil. Cook the other side for the same amount of time.
- Now, add the minced garlic cloves to the skillet and cook until fragrant, preferably for a minute. Pour in the honey blend and sliced lemons. Cook on medium-low heat until the sauce is reduced by about 1/3. Gently use the spatula to base the salmon with the sauce.
- Your dish is now ready! Serve the fish hot garnished with some sliced lemons.
