Looking for a healthier way to spend the day after the Halloween festivities? World Vegan Day, observed every Nov. 1 may be the day for you.

It is estimated that veganism, or the idea of avoiding eating foods with animal products, has been around for about 2,000 years, Days of the Year (DOTY) noted. As early as 1806, the vegan lifestyle was beginning to take shape. By 1944, the term "vegan" was coined and The Vegan Society in the U.K. was born.

On Nov. 1, 1994, on the organization's 50th anniversary, the first World Vegan Day was celebrated.

But World Vegan Day isn't just for the growing number of vegans all over the world, as even non-vegans can observe the event. One way they can do this is perhaps by learning more about the health and environmental benefits of the vegan diet. For instance, switching to a plant-based diet may help reduce one's food-related carbon footprint by up 50%, The Vegan Society noted.

Another simple way to celebrate would be to opt for a vegan meal today. Others may even try their hand at cooking their own vegan meals at home or perhaps join the "Plate Up for the Planet" challenge.

On this day, let's look at some easy vegan recipes that even beginners can whip up.
